Crawfish Etouffee by Mike F.
Ingredients
- 3 Onions
- 2 Celery Stalks
- 1 Red Bell Pepper
- 1 Green Bell Pepper
- 2 stick Butter
- 1 bunch Green Onion - Tops only
- 2 lbs Crawfish tails with juice
- 1 Tbsp Creole Seasoning
- 1 Tsp Black Pepper
- 4 Cloves Garlic
- 1/3 Cup Flour
- 2 Cups Very Hot Water
Instructions
- Chop all Vegetables
- Melt Butter in large pot
- Saute' vegetables for 30 minutes until very tender
- Add flour and stir well
- Add a little of the hot water and stir well
- Add some more water and stir well
- Add the rest of the hot water and you should see the sauce form.
- Saute' for 20 minutes
- Add crawfish and simmer for another 15 minutes
