Crawfish Etouffee by Mike F.

- 3 Onions
- 2 Celery Stalks
- 1 Red Bell Pepper
- 1 Green Bell Pepper
- 2 stick Butter
- 1 bunch Green Onion - Tops only
- 2 lbs Crawfish tails with juice
- 1 Tbsp Creole Seasoning
- 1 Tsp Black Pepper
- 4 Cloves Garlic
- 1/3 Cup Flour
- 2 Cups Very Hot Water
Chop all Vegetables
Melt Butter in large pot
Saute' vegetables for 30 minutes until very tender
Add flour and stir well
Add a little of the hot water and stir well
Add some more water and stir well
Add the rest of the hot water and you should see the sauce form.
Saute' for 20 minutes
Add crawfish and simmer for another 15 minutes
