Crawfish Etouffee by Mike F.

Ingredients

  • 3 Onions
  • 2 Celery Stalks
  • 1 Red Bell Pepper
  • 1 Green Bell Pepper
  • 2 stick Butter
  • 1 bunch Green Onion - Tops only
  • 2 lbs Crawfish tails with juice
  • 1 Tbsp Creole Seasoning
  • 1 Tsp Black Pepper
  • 4 Cloves Garlic
  • 1/3 Cup Flour
  • 2 Cups Very Hot Water

Instructions

  • Chop all Vegetables
  • Melt Butter in large pot
  • Saute' vegetables for 30 minutes until very tender
  • Add flour and stir well
  • Add a little of the hot water and stir well
  • Add some more water and stir well
  • Add the rest of the hot water and you should see the sauce form.
  • Saute' for 20 minutes
  • Add crawfish and simmer for another 15 minutes
